I am often asked how I make my cakes so irresistible and light and tasty. I follow three simple rules which work every time for me and I do hope you follow my tips which I have placed between my recipes for you to enjoy your baking days rather than groaning when yourcakes turn out to be a big flop. Just imagine the nice summer tea parties you will be able to have to show off your new skills to your friends and families.

Ingredients (makes 30 mini fairy cakes):
4 ounces butter
4 ounces Caster Sugar
4 ounces sifted Self Raising Flour
2 eggs
1 cup sifted Icing sugar
Juice of a lemon (*and zest, optional)
Food colouring of your choice if desired

-Put butter and eggs out of the fridge, to warm up to room temperature.

it from the bottom) and place the cake in a tin. We tend to use things like old chocolate tins, airtight tins, anything really. Christmascake keeps really well so as long as it is covered, it will be fine.
After a couple of days sprinkle the cake liberally with brandy. This is best done with a cleat salt or pepper pot. Sprinkle the whole cake but do not be over generous. A coating is fine. I know this is hard to believe but there is such a thing as too much alcohol!
A few days later and it is time to decorate the cake.

Roll out the marzipan until it is about the same size as the cake. Do not roll it too thinly, about a centimetre or so is thick enough.
Now spread apricot jam onto the cake. This doesn't take away from the taste of either cake or marzipan ...

This is a great cake to make with the kids, as it is so simple to make.

Chocolate Christmas Tree
Ingredients:
1kg of chocolate - preferably Cadburys Dairy Milk
250g hazelnuts or marshmallow pieces if there is a nut allergy
Silver sugar balls or frosted almonds to decorate.
Icing sugar for dusting
Baking tray - large one
Greaseproof paper
Cake board
Roughly chop the hazelnuts and put on a baking tray. Put into a moderate over for 5 minutes to lightly roast.
Melt the chocolate (do not eat half first as you will be sick), by breaking up into pieces and placing in a bowl over boiling water. Place approximately 8 squares to one side - to be used later!!
Remove the hazelnuts from the oven ...
